Beans Safe

If you soak beans too long and roots start growing, are they still safe to eat?

I bought a bag of 12 bean soup and instead of soaking the beans overnight I soaked them for like 24 hours and then I drained the water and let them sit in the pot for another 24 hours. Now they have roots growing out of each of the beans. I know beans are cheap, but I really don't want to have to drive back to the store to buy more (lazy!) Are they safe to eat or should I just toss them?

Yes they are safe. Ever eat Chinese food with bean sprouts? The texture will probably be slightly different.
